Cherry Valley Clafoutis

Have you been to the Beaumont Cherry Festival? If so, you know what a big deal cherries are in our area.

A clafoutis is similar to a dutch baby pancake. It's very easy to make (be careful filling the hot dish) and it rises very high in the oven, only to shrink back down as it cools. It's a fancy name for a pretty simple creation. You could easily substitute peaches, apples, or blueberries. And eliminate the almond extract if it doesn't compliement the fruit you use.

Ingredients:

  • 2 tablespoons unsalted butter
  • 12 ounces fresh California pitted cherries
  • 1/2 cup milk
  • 1/2 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup all-purpose flour
  • 3 tbsp Powdered sugar

Directions:

Preheat oven to 400°F.

Beat together sugar and eggs. Add milk, cream, almond extract, vanilla, and mix until smooth, about 2 minutes. Add the flour, and salt and stir until just incorporated. Set aside.

Add butter to a 8" square or round 2qt stoneware baking dish and preheat the dish on a cookie sheet for about 8 minutes.

Carefully pour batter into the hot pan. Place cherries evenly on the batter. Put back into oven.

Bake until golden brown around the puffed edges and set in the middle, about 35 minutes.

Set on a rack to cool for 15 minutes, it will deflate a bit. Slice and dust with powdered sugar to serve.
