There are no better strawberries than what we get locally here in the Inland Empire. Jacinto Farms has been an institution for many years. Their farmstand in Mentone will sometimes have people lined up when they open, during strawberry season.
Here's my simple recipe for strawberry pie. I hope you enjoy.

Ingredients:
- 1 1/2 cups cold water
- 1/2 cup sugar
- 4 tablespoon cornstarch
- 3 ounces strawberry gelatin powder
- 2-3 quarts strawberries, hulled
- Deep dish pie crust, baked and cooled
Directions:
Combine water, sugar, and cornstarch in a saucepan. Whisk over medium heat until thickened. Turn off the heat, stir in strawberry gelatin powder.
Dip strawberries a few at a time with a slotted spoon. Cover the strawberries well with the mixture and drip off excess before placing into pie crust. Repeat with remaining strawberries.
Drizzle pie with remaining mixture if desired.
Loosely cover and refrigerate. Slice with a knife dipped in warm water and wipe clean between cuts.
Lovely on it's own or serve with whipped cream or a scoop of vanilla ice cream.
